The Protected Geographical Indication ‘Riso Nano Vialone Veronese’ refers only to rice obtained from strictly selected seeds of the japonica species of the Vialone Nano variety.
This rice is milled with a ‘propeller’ as in the early 1900s.
Essentially, it is a mill, i.e. a large pot lined with abrasive stone, at the centre of which a propeller which almost touches the bottom of the pot is suspended.
Once introduced into the pot, about 50 kilograms of rice is pressed down hard by the rotation of the propeller and forced up from the bottom, along the abrasive wall, and then back down to the centre.
The friction caused by rubbing against the abrasive wall and between grain against grain ensures that the rice is processed evenly without losing its organoleptic characteristics.
Processing takes an average of about 15 to 20 minutes and when refining is complete, emptying is done manually through an opening in the bottom of the propeller.
