Carnaroli is a rice grown in medium-textured soils (mixed sand), which are submerged with spring water. A process that guarantees totally uncontaminated cultivation. The rice soils are worked in rotation every four years, varying the crops. It is considered one of the best rice varieties, excellent for its cooking properties in any preparation, Carnaroli is therefore ideal for fine risottos and special dishes. It is able to amalgamate and enhance the most diverse flavours.
Rice processed by hand in the Vigasio rice mill with machinery driven by a large water wheel six metres in diameter. Carnaroli Premium is recommended for risottos, salads and for the most demanding palates.
