The precious Vialone Nano rice ‘Premium Line’ has been processed with pestles using a totally artisan method since 1600. In fact, all the gears of the pestle are still moved by a large hydraulic wheel with a diameter of six metres. These movements make it possible to activate the ancient ‘PESTELLI’ process which, by rhythmically beating the rice without heating it, guarantees an excellent product for risotto with unaltered organoleptic characteristics characterised by stubby grains and a dark, rough appearance.
An ideal product for the most demanding palates, it is excellent for grainy risottos, rice pilaf and paella
